About This Coffee

This microlot was produced by Diofanor Ruiz at his farm, Finca La Divisa, in Buenavista, Quindio, Colombia.

On his farm he grows 100% Castillo. He has very specific controlled growing and processing methods, and for the last two years has been focusing on producing natural and honey processed coffees.

This particular micro lot from him has been naturally processed, which means only the ripest cherries are picked and then allowed to dry with the fruit still on the bean.
This process is risky in many parts of Colombia, due to hugh humidity and difficulty achieving proper drying. Diofanor is able to achieve this through the use of raised african drying beds, which allow more airflow through the coffee, which enables more consistant and even drying of the coffee.

This microlot was processed at La Pradera washing station by Cofinet.
